1929 Beef Fillets a la Francais

Ingredients:

  • 1 ½ lb (680 g) thick steak

  • 1 egg

  • breadcrumbs

  • 2 oz (60 g) hot fat

  • ½ lb (225 g) mushrooms

  • 1 oz (30 g) margarine

  • 1 tablespoon grated horseradish

  • 2 tablespoons red currant jelly

  • 1 oz (30 g) cooked ham

  • ½ pint (300 ml) brown sauce

  • pinch of sweet herbs

  • 1 dozen peppercorns

  • 2 lbs (900 g) mashed potatoes

Method:

  1. Cut steak in rounds and cover them in egg and breadcrumbs then fry in hot fat.

  2. Fry mushrooms in margarine.

  3. Combine brown sauce, horseradish, ham, red currant jelly, herbs and peppercorns in a saucepan and simmer for 20 minutes and strain.

  4. Fill the centre of the dish with mushrooms, border with mashed potatoes then arrange the steaks around and pour the sauce over them.
