First Prize winner in the 1 Sep 1929 Truth’s W.A Recipes (reference)
Ingredients:
1 red herring
2 slices of toast
1 grain of cayenne
¼ teaspoon pepper
½ lemon
Method:
Place herring on grid iron and grill until the fish will readily come from the bone
With a couple of forks, remove the skin and bone from the fish and break the remaining fish meat into small pieces
Butter the toast and keep hot then place fish on toast and make it smooth with a knife
Sprinkle over the cayenne pepper and lemon juice
Cut into narrow strips and serve hot
This is a very favorite savory with gentlemen
