1930 Cheese Tartlets

Won forth prize in Sunday Times recipe Contest (reference)

Ingredients:

  • Good pastry

  • 1 egg

  • 1 oz (30 g) grated cheese

  • 1 dessertspoon cream

  • Cayenne pepper and salt

Method:

  1. Line patty pans with pastry

  2. Beat yolk of egg with cheese, cream, pepper and salt

  3. Whisk egg white then add to the mixture

  4. Fill patty pans ¾ full of mixture and bake in quick oven.
