1930 Fruit Fool

won first prize Sunday Times Recipe Contest (reference)

Ingredients:

  • 1 pint (2 cups) of sieved fruit such as

  • strawberries or tinned fruit

  • Sugar to taste

  • 2 tablespoons of cream

  • ½ pint (300 mls) cold custard

  • Cochineal (red food coloring)

Method:

  1. Rub fruit in sugar to taste then put through hair sieve

  2. Mix fruit and cold custard with two drops of cochineal

  3. Freeze then serve in custard glasses
