Won forth prize in Sunday Times Recipe Contest (reference)
Ingredients:
2 oz (60 g) butter
2 oz (60 g) sugar
2 oz (60 g) flour
1 egg
½ teaspoonful baking powder
pinch of salt
few drops essence of almonds
Short pastry
Jam
Method:
Beat butter and sugar to cream then beat in egg
Add baking powder and salt to flour then sieve it lightly into the mixture
Add flavoring and mix it together
Line some patty pans with a nice short pastry then put in ½ a teaspoonful of jam and 1 teaspoon of mixture on top
Bake in a moderate over for 20 minutes.
