Ingredients:
4 gallons (18 litres) of water
5 lb (2 ¼ kg) sugar
½ lb (225 g) brown sugar
1 shillingsworth (20ml) Pineapple Essence
2oz. (60g) tartaric acid
Method:
Boil 1 gallon (4 ½ l) of water then add brown sugar and tartaric acid first followed by the rest of the sugar and dissolve all in boiling water
Add the rest of the cold water and lastly the essence
Pour into a cask for use.
