Prize winning recipe in the 23 Sep 1939 The Australian Women’s Weekly (reference)
Ingredients:
6 large beets
1 ½ pints (900 ml) of water
4lb (1.8 kg) loaf sugar
Strained juice of 6 lemons
Grated rind of 3 lemons
1 small stick cinnamon
vanilla essence
2 - 3 cloves
Method:
1 ) Peel beets and simmer for ½ an hour in water then skim well
2 ) Add the other ingredients and boil well till syrup thickens
3 ) Put in jars and wait until the mixture is quite cold before tying down.
