1936 Carrot Pickle

Special prize in the 2nd August 1936 Sunday Times Recipes (reference)

Ingredients:

6 carrots

2 cups of vinegar

1 cup of water

2 cups sugar

Spices to taste

Method:

1 ) Cut carrots into half a dozen pieces each and boil in well salted water until tender

2 ) Strain the water off and place pieces of carrots in jars

3 ) Boil vinegar, water, sugar and spices together

4 ) Pour liquid over carrots and seal
