Entry Recipe into The Australian Women’s Weekly (reference)
Ingredients:
2 diced rashers of bacon
2 sliced sheep’s kidneys
1 spoonful of cooking sherry
A little cream
3 - 4 eggs
1 tablespoon of each of tomato sauce, chutney and stock
nut of butter
Grated Cheese
Method:
Fry bacon then add sheep’s kidneys and cook for 2 minutes
Sprinkle with flour and add sherry then cook until kidneys are tender.
Take off heat and add a little cream.
Put mixture into individual dishes and break an egg on top of each
Put tomato sauce, chutney, stock and butter into the pan and cook until well mixed
Pour mixture over eggs, sprinkle with grated cheese and cook in the oven for 3 minutes before serving.
