1937 Tomato Nests

Ingredients:

  • 7 large tomatoes

  • 2 oz (60 g) finely chopped ham

  • 1 tablespoon browned breadcrumbs

  • Small amount of chopped onion (if desired)

  • 1 tablespoon gravy

  • 1 oz (30 g) butter

  • 1 teaspoon cheese

  • 2 oz (60 g) cooked macaroni

  • 1 tablespoon white breadcrumbs

  • Pepper and salt (to taste)

Method:

  1. Melt butter in a saucepan then fry ham, onion and white breadcrumbs

  2. When brown, add gravy and the scooped out centres of the tomatoes finely chopped

  3. Nearly fill the tomatoes with this mixture after seasoning with pepper and salt

  4. Make a hollow in the centre and fill with the macaroni cut in small pieces

  5. Mix the browned breadcrumbs and cheese together and sprinkle over and around the edge of the tomato.

  6. Bake in a moderate oven until the tomatoes are cooked.
