1929 Marrow au Gratin

4th Prize in the 5 May 1929 Sunday Times (reference)

Ingredients:

1 marrow

1 Onion

Chopped parsley

1 oz (30 g) breadcrumbs

1 oz (30 g) grated cheese

pepper and salt

Method:

1 ) Peel the marrow, remove all the seeds and slice it into a pie dish in which are some small

pieces of butter

2 ) Chop the onion very finely and mix with parsley, breadcrumbs, cheese, pepper and salt

3 ) Spread this mixture over the marrow adding a few pieces of butter

4 ) Bake in a fairly hot oven for ½ an hour.
