1913 English Cheese Puff

Won First prize in the 29 of June 1913 Sunday times The Ladies Section (reference)

Ingredients:

½ pint (300ml) milk

2 oz. (60 g) fresh white crumbs

4 oz (120g) grated cheese

1 oz (30g) butter

2 eggs

salt , cayenne pepper

Method:

1. Melt the butter in a saucepan, add the milk and crumbs, then when just on boiling point, remove from heat and add the cheese

2. When mixture has cooled slightly, add beaten egg yolks with 2 tablespoons of milk

3. Add the seasoning and then beat the whites of the eggs until stiff and fold them in

4. Put the mixture in an ovenproof dish and bake in a quick oven for about 15 minutes or until well puffed up and delicately brown.
