1910 Ham Omelette

1st Prize winner in the 21 Aug 1910 Sunday Times (reference)

Ingredients:

  • 3 eggs

  • ½ teaspoon salt

  • ¼ teaspoon pepper

  • 2 tablespoonfuls of lean cooked ham chopped very finely

  • 1 oz (30g) butter

Method:

  1. Break eggs into a basin add pepper and salt then beat well

  2. Add the chopped ham to the mixture

  3. Heat an omelette pan then add butter letting it get very hot

  4. Pour in the contents of the basin and immediately stir around with a wooden spoon.

  5. When it is beginning to set, tip the pan up towards you; scrape the contents towards the handle and shape a little then after about ten seconds roll it over to the opposite side.

  6. When the outside is set and pale brown, tip out on to plate and serve at once.
