Ingredients:
Enough pastry to line medium size pie dish
2 oranges
2 oz (60 g) castor sugar
2 eggs
2 oz (60 g) cake crumbs
1 oz (30 g) butter
1 gill (120 ml) milk
Method:
Line a medium size pie dish with pastry then let stand while preparing filling
Grate rind off oranges and thoroughly mix with sugar then add cake crumbs and butter
Heat milk and pour over the mixture.
Separate the eggs and beat the egg yolks then add them to the mixture along with the strained juice of the oranges then mix well.
Beat the egg whites to a stiff froth then stir into the mixture
Pour into the prepared pie dish and bake in moderate oven for 40 - 45 minutes
