1914 Fish and Oyster Pie

1st Prize winner in the 31 May 1914 Sunday Times (reference)

Ingredients:

  • Leftover cold boiled fish

  • 2 dozen oysters and liquid

  • ½ teaspoon nutmeg

  • 1 teaspoon finely chopped parsley

  • salt and pepper to taste

  • breadcrumbs

  • butter

Method:

  1. Prepare the fish.

  2. Place one layer of fish in pie dish and sprinkle with pepper and salt.

  3. Place a layer of breadcrumbs, oysters, nutmeg and parsley on fish layer.

  4. Repeat steps 2 and 3 until all the fish has been used or the dish is full.

  5. Pour in some melted butter and oyster liquid and cover in breadcrumbs or strips of puff pastry if prepared and bake until brown.
